Clementine Stallworth de Roode A BFA graduate of Ole Miss, I have been a culinary professional for 35 years in Huntsville, Alabama. I am passionate about food and ways to make it beautiful, appealing and delicious. I have focused my career on excellence in professionalism and in product. I was the owner of Clementine’s restaurants for thirty-one (31) years, including a tea room at the Huntsville Botanical Gardens, and I still operate Clementine’s Catering (and Grab and Go) since 1987. I earned Caterer of the Year honors multiple times. I closed my dine-in restaurants after being asked to join the U.S. Space and Rocket Center as Director of Food Service/Executive Chef. There, I was responsible for up to 92 employees utilizing three on-site kitchens. I have catered or managed food service for up to 3,500 people at any given time. I became the Director of Food Service for Fleming Farms, a new Bridge Senior Living Community in Huntsville, AL, and set the level for excellence in food and service for the facility, but left recently to focus on family and my catering business. Today, Clementine’s Catering (and Grab and Go) is going strong and offers, on a rotating basis, over 13 varieties of chicken salads as well as pasta, potato and vegetable salads. I also create an assortment of soups and frozen casseroles. I have proudly trained staff in culinary arts, inventory management, staffing and managing budgets to pass on knowledge to the next generation of food service workers and service staff. I have been nominated for many awards for foods and services. I have placed and won in national culinary competitions.
