Dave White is the Founder and Pitmaster of Great White Smoke, Bloomington, Indiana’s premier barbecue truck and catering business. His journey into barbecue wasn’t just about food—it was about family, resilience, and the pursuit of independence. In 2013, life took an unexpected turn when both his wife and newborn son were hospitalized for a month. His son was born with a disability, and the experience made one thing clear: he needed control over his time to provide for his family on his own terms. Self-employment became the goal, and cooking became the vessel. What started as a way to make ends meet quickly became a full-fledged career, fueled by passion, hard work, and an unwavering commitment to excellence. Over the years, Dave has cemented himself as a dominant force in the barbecue world, earning 27 Grand Championships, 23 Reserve Grand Championships, over 100 category calls, and dozens of ancillary wins. He’s been named King of the Q, won America’s #1 Food Truck, and in 2024, he placed #4 Overall at the World Food Championships, proving that his skills extend beyond the smoker. His brisket at Memphis in May 2024 finished just shy of a perfect score, further solidifying his reputation among the best pitmasters in the world. Beyond competition, Dave is committed to giving back. He founded Hoosiers With Hearts Disaster Relief, using barbecue to serve communities in crisis, and works with the Romans Warrior Foundation to support veterans. His dedication to the craft extends beyond the pit, as he’s also organized more than a dozen competitions, helping grow the sport he loves. From a parking lot pit to the world’s biggest BBQ stages, Dave’s journey is proof that hard work, skill, and an unbreakable will can turn any challenge into a legacy.
