HEAD COOK: Lois Spruytte
COMPETITION: World Dessert Championship
Lois is a self taught amateur baker/cook and a native of the great state of Michigan. She first started entering contests in her home state a decade ago. In 2011, Lois won first place for Michigan Apple's "Best Apple Pie in Michigan." That win gave Lois the confidence to compete on the national scale. She entered the American Pie Council's National contest, sending her competitive spirit to Orlando, Florida. Lois enjoyed the experience of the Pie National Competition, and went on to compete in 2012, 2013, 2014, 2015, 2016, and 2018. Perhaps her proudest moment from all of those competitions was in 2013 when she won 3rd place in the innovation category.
While 2013's win was notable, Lois flexed her strength yet again in 2018 at the Pie National Contest when she won a third place ribbon with her Darn Clucking Good Chicken Pot Pie. This pie is a thyme infused pastry crust with chunks of herb roasted chicken and vegetables in a rich sauce.
Lois is devoted to growing herself as a baker. In 2016, she traveled to Whidby Island in the Pacific Northwest to attend Kate McDermott's. Art of the Pie (Pie Camp). Through her experience at Pie Camp, she learned new techniques to help her excel at her pie backing.
Lois takes pride in creating all of her recipes from scratch. Once an idea pops in her head, she develops flavor profiles and starts the testing process. She shares her passions with friends and coworkers, who absolutely love it when they see Lois bringing in a container of her latest creation.
Consistent with her dreams to compete on a larger scale, Lois qualified for her first World Food Championship in 2017. She was Michigan's second place winner with the Taste of America online contest, competing in the bacon category.
This year Lois is very excited to return to WFC as the Michigan Taste of America 1st place winner. She is looking forward to competing in the dessert category. Her family and friends are ready to increase their waistlines during research and development for the 2018 World Food Championships.
At the 2018 World Food Championships Lois made it into the top 10 of the dessert category. She was 10th. Lois had one more bake to compete during the weekend. She created and executed her Essence of Autumn Pie, a cranberry and pear pie with a crust infused with cardamom and orange zest and garnished with sugared cranberries and rosemary. The dish jumped her from tenth to third place overall in the dessert category.
As the calendar turns to 2019, Lois continues to enjoy her culinary journey. She hopes to challenge herself culinarily and is opportunistic about the road ahead.
