COMPETITION: World Open Chili Championship
2018 will be the third consecutive year competing in the WFC but the first year of being my own Head Cook of the Open Chili Category. In the past two years, competed as sous chef to David Crabtree in Steak 2016 placing 12th in opening round. Returned in 2017 as sous chef to the same Chef in the Seafood category placing 4th in opening round and then placing 4th in the top ten. Won a golden ticket at a local Chili competition and so I am my own captain this year. Concurrent Executive Sous Chef at the Island View Casino Resort in Gulfport, MS for 12 years, managing back of the house operations for 19 food outlets that include a staff of over 140 cooks, sous chefs, and chefs de cuisines.
Previously employed for Harrah's Casino in Biloxi, MS, cooking and managing a high end steakhouse and Asian restaurant kitchens.
Competed and placed (gold, silver, bronze medals) in several culinary competitions over the course of many years in MS, LA, and AL. Hold two prestigious medals of honor as elected by the American Culinary Federation's MS Gulf Coast chapter 's Chef of the Year award in 2008 and 2011.
Former President (2 years) and Chairman of the board for the MS Gulf Coast Chapter of the American Culinary Federation.
Baltimore International culinary school graduate. Worked in restaurants for 25 years with much time on the east coast. Accounting and Administrative background in earlier years.

Original native of Baltimore, Maryland then migrated to the deep south and have been living on the MS gulf coast since 2003.
