I've been cooking all my life. Fueled by a passion for eating and good food, but limited by budgets, the drive to cook came from necessity in university. Plus I learned cooking got me out of dishes duty. It quickly developed into more of a passion and hobby as I discovered more ingredients and moved away from the typical student style spaghetti. When I moved to Canada from Belgium several years ago I noticed I couldn’t find some of the breads, prepared meats and cheeses I was so fond off, so I started making them myself. What followed was an accelerated discovery of techniques, products, farmers, microbiology, purchases of obscure tools, the building of a fermentation fridge and many other experiments. Being completely self-taught, I never want to stop learning and applying old techniques to new modern products. I love to share this passion by teaching cooking classes, and showing everybody how easy it is to make authentic European style products at home!
