With over a decade of experience as a yacht chef and estate manager, Paul Allen has conquered a myriad of hurdles in his culinary adventure. You would think his journey began at the Culinary Institute of America where he studied under the best instructors the Americas have to offer. But alas, the true heroin to Chef Pauly’s story is the one and only Memaw. Memaw sparked his fire for quality & intensity in his craft. She lives through each morsel of his cuisine.
