COMPETITION: World Dessert Championship
My name is Marc Nacua, and I live in Melbourne, Australia. I have worked as a chef for 15 years at Crown Casino - Crown Towers in Melbourne. My journey in the kitchen sparked a deep curiosity for various cuisines, leading me to develop diverse culinary skills and techniques. During my time at Crown Casino, I completed my apprenticeship in commercial cookery, which allowed me to master a range of cuisines, including Western European, Aussie classics, Middle Eastern spices, and variety asian cuisine. However, my true passion lies in the world of desserts. I am fascinated by the intricate art of assembling beautiful desserts, from layering sponge and cream cakes to perfecting piping techniques. Over the years, I have honed my skills in creating different dessert elements, such as sponges, creams, the use of gelatine, pastries, sugar works, various chocolates, and using different kinds of mold and tuille to add a little touch to the dish. I continue to explore and learn about desserts from around the world, constantly seeking to elevate my craft.
