I started my journey in Texas barbecue as a backyard smoker enthusiast. My father-in-law left a small kettle grill in my backyard in 2017, which I converted into a mini-smoker. I threw a brisket on and was immediately hooked, and began smoking meat every weekend; however, barbecuing is an expensive hobby. My wife, Ashley, told me that if I was going to continue to cook regularly, I needed to find someone to buy it. That’s how “Dayne’s Underground Barbecue” was born. I posted on social media that we would be selling meats and sides from our front yard (Ashley made mac and cheese, potato salad, coleslaw, and Serrano cheddar cornbread muffins), and the response was overwhelming- we sold out in less than an hour. We decided to hold an underground barbecue sale from our house the last Sunday of every month. The crowd continued to grow and bring people from all over the state of Texas who wanted great barbecue- including a reporter and photographer from the Dallas Observer. Once an article was released singing our praises, Ashley knew that we had to register our business. Encouraged by my wife, I named the brand Dayne’s Craft Barbecue. My wife and I held pop-ups all over D/FW, which led to us becoming a staple at Lola's Trailer Park & Saloon (a former music venue in the heart of Fort Worth) for two years as we continued establishing our brand. Now in 2024, we have officially opened our first and only brick-and-mortar restaurant in Aledo, TX!
