HEAD COOK: Pascal Aussignac

COMPETITION: World Vegetarian Championship


Chef Pascal Aussignac hails from Toulouse in South West France, where foie gras, duck, good wines and Armagnac are the order of the day. He trained with French master Chefs Gerard Vie, Alain Dutournier and Guy Savoy. His love of food, innovations and obsessive attention to the finer details has been delighting foodies & critics in London since 1998. Michelin-starred chef and restaurateur, he cooks in and oversees - in close collaboration with his business partner Vincent Labeyrie – a number of award-winning restaurants and bars in London; all with a slightly different culinary theme but celebrating the food of France and of his beloved homeland of Gascony. Their flagship restaurant, Club Gascon, was awarded a Michelin Star in 2002 that it has retained every year since. In 2007 the restaurant was awarded the ultimate peer group accolade of ‘Restaurant of the Year’ by The Caterer Magazine and in 2013 Pascal was awarded ‘Restaurant Chef of the Year’ at the Craft Guild of Chefs Awards. In 2008, he wrote his first recipe book: "Cuisinier Gascon" awarded Best French Cookbook by “Gourmand Award” in France. Well respected within the industry, Pascal continues to dedicate his time to showcasing the cuisine he loves: he still cooks at Club Gascon every day, looks after the award-winning floral arrangements across all of his restaurants, and continues to surprise the London foodie scene with his innovative take on Southern French cuisine. In 2015 Pascal introduced new fast-casual concept “Duck’N Roll” to Street Feast’s Hawker House pop-up site to great acclaim and has since added permanent site in Shoreditch. Pascal has won the coveted ‘Best in Taste’ award at Taste of London three times in the last four years with dishes “Marmite Royale & Soldiers”, “Croque Gascon” and “Foie Gras Burger with Truffle Chantilly”. In 2016 Pascal won ‘Best International Dish’ for his dish of “Slow-cooked, truffled duck egg in the nest”. At the moment post pandemic , there is on operation Club Gascon , Le bar du Club Gascon, Cigalon, Baranis and our fish and chips venue called Catch me .
