COMPETITION: World Chef Challenge
I owned a restaurant in Huntsville, Alabama for 31 years. they have ranged from free standing white tablecloth, to Gelato Sandwich Shop and The botanical Garden Tea room. I have manufactured chicken salad in the commercial market and am in the process of bringing them out again. I am in my present job after coming out to the Space and Rocket Center to sell my chicken salads to them. I was a consultant for them for several months and then was offered a position of Director of Foodservice and Executive Chef position. I have been in this position for 5 years. I maintain the Crew Galley which serves Space Campers three meals a day. We have had our largest summer with up to 1300 Space campers in house. I also over see the Museum Mars Grill. We have maintained 26% growth in sales each year. We also have a large Catering service which uses the Davidson Center, which house the Saturn Five Rocket on its side, and other areas on premise. I have a great staff and continue to want to rain and teach them what I have learned. That is the reason I am interested in bringing these young men out to compete with me.
