James got his first paid job as a dishwasher at 15 and now has over 25 years of experiences in the restaurant and hospitality industry. Having spent the first half of his career in upscale catering and fine dining, he is currently the Director of Food & Beverage for Mama Fu’s, an Austin, TX-based concept specializing in Asian comfort food. James is responsible for the Culinary and Purchasing departments for the company, but he is best known for creating unique, off the wall dishes like Crab Rangoon Queso, Citrus Cheesecake Wontons, and Jalapeno Brisket Fried Rice for Mama Fu’s “Spice Market Menu” LTO program. He is still an excellent dishwasher.
