COMPETITION: World Seafood Championship


Billy Highland, of the Flora-Bama Yacht Club, has been working in the restaurant industry since age 13. He learned creativity from his grandmother who owned a steak house and bar. He remembers being fascinated as she made her homemade onion rings, and took every opportunity to cook with her -- that is, after bussing tables and long hours in the dish pit. He attributes his work ethic to his mother, as she owned three restaurants and supported four boys all by herself. He is excited to compete in the seafood category, because he feels spoiled and blessed to live on the Gulf Coast, where fresh, local seafood makes every dish taste better.
