Ricardo Heredia has been working in professional kitchens for over 16 years - leading, creating, and driving the trends of the food & beverage industry. With his energetic personality, motivational traits, and passion for the culinary arts, Chef Heredia is an expert in managing and inspiring kitchen staff in all kitchen environments. He is a dynamic leader who welcomes high-pressure scenarios and opportunities to prove his mental and physical skills. Chef Heredia understands F&B's evolving nature and continues to expand his knowledge in specialty programs. His latest course completions were at Qzina Pastry and Valrhona Chocolates where he honed his baking and pastry skills. He has exceptional knowledge in kitchen procedures including BOH management, methodical training, and preparing foods at a reduced cost without compromising quality and taste. Chef Heredia was the Executive Chef and partner at Alchemy San Diego where he demonstrated his innate skill for innovative menu development. His accomplishments in the culinary community and involvement with social events have gained him much-deserved recognition and a reputation that attracts top-notch talent to his kitchens. Chef Heredia now created Kitchen Mafioso a consulting and education company dedicated to giving back to the community. Chef Heredia is also currently driven by food competition as 2013 & 2014 World Bacon Champion, 2015 Avocado Madness Champion and the 2014 World Food Food Champion.
