Justin Fox Burks

Justin’s beautiful food photography has appeared in Food & Wine, Garden & Gun, GQ, and The London Independent. Justin and Amy’s recipes and articles have graced the pages of Woman’s Day, The Commercial Appeal, The Memphis Flyer, Memphis Magazine, and Edible Memphis. Their website, thechubbyvegetarian.com, was featured nationally on The New York Times Well blog for Thanksgiving 2012 recipes, as a Blog of Note on blogger.com in November 2010, and as a favorite site on the popular vegetarian blog 101cookbooks.com. In addition, their focus and expertise in vegetarian cooking landed Justin a judging spot on the Food Network’s The Great Food Truck Race with Tyler Florence in 2011.

Justin and Amy have been invited to cook in the finest restaurants in Memphis, Tennessee. These culinary events include a collaborative vegetarian brunch menu with Food & Wine best new chef, Kelly English, at Restaurant Iris and a five-course, all-tomato dinner at The Trolley Stop Café. TCV Scallops, a dish from The Southern Vegetarian, that uses king oyster mushroom as a stand-in for bay scallops, was featured on the menu at Andrew Michael Italian Kitchen.

With the goal of sharing their passion for the preparation of healthy, satisfying vegetarian meals, Justin and Amy are thrilled to help others eat in a new and tasty way. Having lost a combined 100 pounds due in part to their change in diet and interest in home cooking, they are ready to share their way of life with the world, one amazing vegetarian recipe at a time.
