Pineapple Overload Bread Pudding

INGREDIENTS

3/4 C | cup | granulated sugar |
3/4 C | cup | Sour Cream |
1/2 C | cup | Sweetened Cond. Milk |
2 | Tbsp | Vanilla Extract |
1/2 C | cup | Heavy Cream |
1.5 # | # | Bread |
1/2 C | cup | Dole crushed pineapple |
3/4 C | cup | un-salted butter |
1 C | cup | Light brown sugar |
1/2 t | tsp. | Cinnamon |
1/2 t | tsp. | Nutmeg |
1/2 C | cup | Pecans |
INSTRUCTIONS
Place bread in a large bowl.
Pour melted butter and 1/2 cup of the brown sugar over the bread to coat.
In another large bowl, combine and whip eggs, sugar, milk, vanilla, juice and sour cream. Pour the wet mixture over the bread and butter mixture, incorporate and allow to rest for 20 minutes.
Pour the bread mixture into dutch oven, top with remaining brown sugar and pecans. Place coals on the bottom and top of the dutch oven for an internal temp. of 375 deg. Cook for 20 min.
Top with pineapple, bourbon, brown sugar and bacon renderings.
