I’m Chef Brooke Silk, a private chef and pastry artist from Wollongong, Australia. After honing my skills in hatted restaurants, I founded Dine In, creating bespoke fine dining experiences, and Capture the Chef, a blog dedicated to recipes, techniques, and the stories behind my food. In 2023 and 2024, I won back-to-back Sydney Golden Ticket competitions, earning the chance to represent Australia at the World Food Championships. Last year, I proudly placed third in the world in the dessert category. This year, I return to the global stage with a dessert that blends nostalgia, precision, and bold flavour—continuing my mission to showcase the creativity and craft of Australian food to the world.
