Paul Flores was born and raised in the heart of the hills , Kerrville Texas . His love for grilled and smoked meats began with a local favorite , simple beef jerky from Bernhards meat processing . His pop began deer processing at an early age and became a skilled butcher overseeing many HEB locations which got their start in Kerrville . Pauls grandfather Frank Flores was a self taught masonary who had a passion for river rock and built many BBQ pits for friends and family from rock and cement . The abundance of post oak wood , river rock pits , dads butcher skills , fresh garden produce and wild field chilis produced the drive and ambition to create Texas Cowboy Cuisine .
