COMPETITION: World Chef Challenge
EXECUTIVE CHEF PA JALLOW:
I was born and raised in the tropical climate of Gambia in Western Africa where my love for cooking all began. My family camaraderie and environment of delicious fresh cuisine became second nature at a very young age. My Mother is one hell of a cook and knows how to throw it down in the kitchen, she still makes my favorite dish, "supa" for me. I'm a graduate from Le Cordon Bleu and had the privilege to intern by a James Beard 12x nominee, Kevin Binkley, at Binkley’s in Scottsdale. Competing has been a lot of fun and I have been lucky enough to be a 1st Place Winner in both the Ribs and Pork competitions in Scottsdale, AZ and won the Golden Ticket to WFC in 2015 ultimately taking 2nd Place in the Seafood category at the World Food Championships held in Las Vegas, following that I placed 2nd in the Almost Famous Chefs competition sponsored by San Pellegrino.
The techniques and expertise of American Chefs Thomas Keller, Paul Prudhomme, and Sean Brock have inspired me to create my own unique style in taking the fundamentals of classic cooking and turning up the volume, focusing on balance and staying clear of anything one-dimensional.
