I am the former owner of a meat plant where we produced custom meat products for food service. I picked up a lot of of ideas from all of the chefs I had dealt with from restaurants over the years. I have been entering chili and BBQ competitions for over 20 years. Cooking not just good food but food that people taste it and say " that is the best I ever had is my satisfaction in cooking" I love to put a smile on someone's face when they taste anything I have cooked. People have always asked me why I don't open a restaurant. My answer is always cooking then becomes work.
RJ and I started cooking together for the Sertoma Chili Championships a few years ago and it made for a perfect match. It brought together 2 distinct ideas and melded into a great collaborative chili.
