Head Pitmaster, Jerry Stephenson, Jr., grew up in eastern North Carolina, and, rumor has it, was born next to a pig cooker.
He learned to cook whole hog at an early age and came to appreciate not only the fine taste of eastern N.C. pulled pork, but the camaraderie and fellowship that come with standing around a pit. Back then they cooked hogs old-school - reading the pit temperature by the touch of a hand, and how to tell when a pig was done by pulling on the legs.
He founded Redneck Scientific in 2010 and quickly became engaged in the KCBS world of pork, chicken, brisket and ribs.
Family members, sister Nancy Manley, brother-in-law Sean Manley, wife Liz Stephenson and two young ‘uns, Elle and Fiona, round out the Redneck Scientific team.
The science and history of food fascinate Jerry. A perfectionist by nature, he will spend weeks honing a sauce or rub or trying new recipes.
