QUALIFYING EVENT: Chef's Roll
I grew up in rural Cornwall with my mother, I visited my father in west london where we would eat in great restaurants and visit my grandmother who was from Burma and would always provide a banquet of authentic Burmese dishes. I understood quality cuisine and flavour combinations from an early age.
My career began at the age of 13, where I worked my way up, though a number of establishments to my first head chef position at the age of 21. Since then I have worked in Australia as an agency chef at various locations including the great barrier reef, also in west london at club Movida, and a number of eateries around Cornwall. I have also been fortunate enough to travel through many countries in search of authentic cuisine, these include, Thailand, Singapore, Morocco, Colombia (where I met my wife) and other parts of Latin America, Portugal, Spain, France and Norway.
Along the way served time under some excellent chefs from all corners of the globe, including Italy, France, Thailand, South Africa and Japan to name just a few. This gave me insight into many different cultures and their cooking styles, I like to incorporate this into my daily cooking and I feel i have created a style that is quite unique.
Now myself and my wife run our own gastropub in west Cornwall, where we are developing an excellent reputation for high quality cuisine. Here i put all my years of experience into practice running daily specials and a constantly evolving a la carte menu. I am delighted to have this opportunity to compete in the world food championships and look forward to giving the rest of the world an insight into my love for food.
