Founder/Chef of Big Fork Brands a niche sausage company in Chicago. What makes Big Fork special is we make sausage better with BACON. That's all we do, BACON SAUSAGE. We have 7 different flavors total: Hickory & Applewood, Aged Cheddar, Maple & Brown Sugar, Cracked Black Pepper, Roasted Portabella, Spicy 3-Pepper, and Chicken. We sell our sausages to both retail and foodservice industry. Lance also runs a culinary consulting firm called Avery Innovations, LLC. Specializing in concept through commercialization, Avery Innovations, LLC is a boutique culinary consulting firm supporting entrepreneurs, ingredient companies, processors, and consumer package goods companies alike.
