Recipe Post: Tortilla Turkey Burgers with Cucumber Relish

I enjoy turkey burgers. I love how versatile they can be; they’re inexpensive and great for the entire family. But the consistency and durability of lean turkey can be sometimes be tricky on a grill. This recipe came to fruition by necessity and turned out to be delicious. I’ve paired it will complimenting flavors, the smoked paprika really brings out the tortilla and cumin. But the punch from the bright relish helps deliver a complete, overall flavor. The addition of the queso fresco was also by design; this cheese just won’t give up, it will try to melt, but stays firm and delivers texture and compliments the other ingredients. Try this recipe as sliders or meatloaf. Let’s face it, any variation of creating tasty, healthy food is a win!

Tortilla Turkey Burgers with Cucumber Relish

Servings: 5

Ingredients

2 Tablespoons minced yellow onions

¼ cup minced bell pepper

1 clove garlic, minced

1 Tablespoon Grape Seed oil

1 (20-ounce) package Lean Ground Turkey

2 cup Corn Chips crushed (soaked in warm water)

1 teaspoon cumin

⅛ teaspoon smoked paprika

.5 ounce Queso Fresco

1 Tablespoon cilantro minced

1 medium cucumber diced, peeled and seeded

1 medium tomatoes, diced

1/2 medium red onion, diced

1 Tablespoon Champagne Vinegar

Pinch of Kosher salt

Directions

In a small bowl, crush the white corn chips, cover in warm water and allow to stand until soft. In a separate bowl add your turkey, minced onion, bell peppers, garlic, paprika and cumin. Mix well. Squeeze the water from your softened corn chips and add to the turkey mixture. Make sure the water has been completely squeezed from the tortillas.

Incorporate the corn chips and the turkey mixture until smooth. Patty the turkey mixture into 4.5 ounce burgers. Reserve and place in the refrigerator for 20 minutes to firm and chill. In a medium bowl, add crumbled queso fresco, cilantro, vinegar, salt and gently mix to incorporate flavors. Remove the burgers from the refrigerator and grill or stovetop cook your turkey burgers until done. Serve with 2 tablespoons of cucumber relish to finish.
